Almond Brittle Candy
1 cube butter (not margarine)
1/2 c. sugar
1 tbsp. light Karo syrup
1 c. almonds (peanuts), diced
Melt butter, add remaining ingredients. Stir continuously over medium heat until bubbly until
mixture starts to turn golden brown. Pour out onto waxed paper and spread quickly into a thin
layer.

Almond Butter Balls Candy
1 c. butter
1/2 c. powdered sugar
1/2 c. chopped almonds
1/2 tsp. vanilla
1 3/4 c. flour, sifted
Cream butter and sugar; work in vanilla, flour and nuts. Shape into small balls. Place on
ungreased cookie sheet. Bake at 350 degrees for 20 minutes. When cool roll in powdered sugar.
Makes 3 dozen

Almond Christmas Balls Candy
1 c. soft butter
1/4 c. confectioner sugar
2 c. sifted flour
1 c. ground almonds
1 tsp. almond extract
candied or jar cherries
Cream together. Roll teaspoon of dough into a ball and press cherry in middle. Cover
completely. Bake on greased cookie sheet 30 minutes at 325 degrees. Roll in granulated sugar
